Is this normal, or am I missing something? When I play against a recorded round, it seems the wind direction for the real-time round is rarely the same as when I recorded the round. When you play against a recorded round, it should be the same pins and the same wind direction, right?

It is normal.
Unless that is the player of the REC round sends you a screenshot of their wind direction on the first tee and you keep re-starting the round until you get roughly the same wind as the REC player had on the first tee.
